Vegan "Mayo"

Ingredients:
12 oz firm silken tofu
3 tbs freshly squeezed lemon juice
2 tbs extra-virgin olive oil
1 tsp dry mustard
1/2 tsp salt

Combine the tofu, lemon juice, olive oil, mustard, and salt in a blender and puree until emulsified, about 1 minute.

1 1/2 cups
22 calories per tablespoon
